## Ingredients

- ½ cup ghee + for deep frying
- 5-6 ice cubes
- 2½ cups refined flour (maida)
- 1 tbsp gram flour (besan)
- 2 tbsps lemon juice
- Ready-made sugar syrup as required
- Ready-made rabdi as required
- Slivered almonds for garnish
- Blanched and slivered pistachios for garnish

2. Add lemon juice and mix well.
3. Heat sufficient ghee in a small deep pan, place a small ring mould in the centre, drop batter in a thin stream in the centre, fry for a few seconds and start dropping the batter again in the same way. Using a skewer, make a hole in the centre and repeat the same process for 10-12 more times, making a hole in the centre after every addition.
4. Occasionally add hot ghee on top of the ghevar from the other pan. Drain on a cooling rack.
5. To serve, drizzle sugar syrup on ghevar, pour rabdi, garnish with almonds, pistachios, dried rose petals and silver varq.
