# Methi Aur Papad Ki Sabzi

## Ingredients

- ½ cup fenugreek seeds (methi dana), soaked overnight
- 8 moong dal papads
- 2 tbsp oil
- ¼ tsp asafoetida (hing)
- ½ tsp mustard seeds
- 1 inch cinnamon stick
- 2 dried red chillies
- ¼ tsp turmeric powder
- ¾ tsp red chilli powder
- 1 tsp coriander powder
- Salt to taste
- 6 kokum petals
- A little jaggery
- 2 ripe elaichi bananas, peeled

## Method

1. Heat a non-stick pan. Add fenugreek seeds and 2 cups of water. Allow it to cook until the fenugreek seeds are tender.
2. While the fenugreek seeds are cooking, roast 4 papads directly over a flame until they are crisp. Set them aside for later use.
3. In another non-stick pan, heat oil. Add mustard seeds and cinnamon. Break the red chilies and add them to the pan.
4. Once the spices start to sizzle, drain the cooked fenugreek seeds and add them to the pan. Mix well. Then, add turmeric powder, red chili powder, and coriander powder. Stir to combine.
5. Pour in 1&frac12; cups of water and add salt to taste. Mix thoroughly. Break 3-4 unroasted papads into smaller pieces and add them to the pan. Include kokum petals and jaggery. Finally, add small pieces of bananas and mix everything together.
6. Transfer the prepared mixture into a serving bowl. Crush the roasted papads and sprinkle them on top of the dish. Serve hot and enjoy!
