# Creamy Matcha Chia Mousse

> Jo blends up a Creamy Matcha Chia Mousse in just 10 minutes, then the fridge does the rest. Milk, Greek yoghurt, matcha, a handful of spinach, vanilla and chia seeds turn into a thick, luscious green mousse that’s perfect for breakfast or dessert. Top with kiwi, mango or berries and finish with pistachios plus an optional drizzle of honey or extra yoghurt.

## Ingredients

- 1 cup milk (dairy or soy for protein)
- ½ cup Greek yoghurt
- 1 tbsp matcha powder
- 1 small handful baby spinach leaves
- 2-3 tsp honey or maple syrup (to taste)
- 1 tsp vanilla extract
- 4 tbsp chia seeds

### To Serve

- Fresh fruit (kiwi, mango, or berries work beautifully - I like the idea of using kiwi to keep it all green)
- A handful of chopped pistachios (or any other nut)
- Optional drizzle of honey or extra yoghurt

## Method

1. Add the milk, Greek yoghurt, matcha powder, spinach, honey (or maple syrup), vanilla, and chia seeds to your blender. Blend on high for 30-45 seconds until smooth and vibrantly green.
2. Pour into a bowl or container, cover, and refrigerate for at least 2–3 hours, or overnight. The mixture will thicken into a luscious mousse-like pudding.
3. Spoon into glasses or bowls. Top with fresh fruit and a sprinkle of chopped nuts. Finish with a drizzle of honey or extra yoghurt if desired.
