A wonderful fusion of American and Italian cuisines! Spaghetti tossed in a creamy, Cajun-spiced sauce and finished with a sliced chicken breast also marinated with Cajun spice on top. A classy meal is ready to be savoured.

Ingredients
4 boneless chicken breasts
400 grams cooked spaghetti
4 tablespoons Cajun spice mix
Salt to taste
8 teaspoons butter
4 teaspoons olive oil
4 teaspoons refined flour (maida)
2 cups milk
2 tablespoon parmesan cheese powder
4 tablespoons grated processed cheese
4 tablespoons fresh cream
Micro greens for garnish
Method
Place chicken breasts on a plate, sprinkle salt and 3 tablespoons Cajun spice mix and rub the mixture well on both sides of the chicken breasts.
Heat 4 teaspoons butter and olive oil in a shallow non-stick pan.
Place the chicken breasts in the hot pan and cook on high heat for 2-3 minutes. Flip and cook the other side for 2-3 minutes as well. Reduce heat to medium and cook till done.
Heat remaining butter in the same pan, add refined flour, mix and sauté till fragrant. Add milk and mix well. Cook for 1-2 minutes.
Add remaining Cajun spice mix and salt and mix well. Cook till the mixture thickens.
Add spaghetti and mix well. Add parmesan cheese powder, processed cheese and fresh cream and mix well.
Place the chicken breasts on a worktop and slice them thickly.
For each portion arrange ¼ of the spaghetti on a serving plate. Place a chicken breast on it and garnish with micro greens. Serve hot.
