Ingredients
200 grams hariyali mawa
2 cups sugar
1 lemon wedge
3-4 green cardamoms
1½ cups milk
½ cup cornflour
2 tbsps water chestnut flour (singhade ka atta)
½ tsp green cardamom powder
Ghee for deep frying
Silver varq for garnish
Method
Heat a pan. Add sugar, 2 cups water and lemon wedge. Slit open green cardamoms and add to the pan and cook till sugar reaches 1 string consistency.
Heat a nonstick pan. Add hariyali mawa and 1 cup milk and cook for 5-6 minutes on medium heat.
Add cornflour, water chestnut flour and mix well. Cook for 4-5 minutes or till thick.
Add remaining milk and mix well until there are no lumps. Strain and allow to cool.
Add green cardamom powder to the syrup and strain the syrup through a fine sieve and set aside.
Heat sufficient ghee in a kadai. Fill the mawa mixture in a piping bag and pipe into thick spirals in hot ghee. Deep fry till brown.
Drain and add to the syrup. Set aside for 3-4 minutes.
Transfer in a serving plate, garnish with silver varq and serve.
