Ingredients
½ cup ghee + for deep frying
5-6 ice cubes
2½ cups refined flour (maida)
1 tbsp gram flour (besan)
2 tbsps lemon juice
Ready-made sugar syrup as required
Ready-made rabdi as required
Slivered almonds for garnish
Blanched and slivered pistachios for garnish
Dried rose petals for garnish
Silver varq for garnish
Method
Take ghee in a large bowl, add ice cubes and mix with your palms till the ice melts. Add refined flour, gram flour and 4½ cups water little by little, mixing after every addition till a smooth and thin batter is formed.
Add lemon juice and mix well.
Heat sufficient ghee in a small deep pan, place a small ring mould in the centre, drop batter in a thin stream in the centre, fry for a few seconds and start dropping the batter again in the same way. Using a skewer, make a hole in the centre and repeat the same process for 10-12 more times, making a hole in the centre after every addition.
Occasionally add hot ghee on top of the ghevar from the other pan. Drain on a cooling rack.
To serve, drizzle sugar syrup on ghevar, pour rabdi, garnish with almonds, pistachios, dried rose petals and silver varq.
