An amazing bruschetta packed with fun ingredients is filling and flavourful. Baked grapes and grilled pineapple slices topped on a baguette along with ricotta cheese, makes for a fancy snack.
Ingredients
35-40 black grapes
Ricotta cheese as required
8 toasted baguette slices
6-8 garlic cloves
4 fresh thyme sprigs
2 teaspoons olive oil
Salt to taste
Crushed black peppercorns to taste
3 canned pineapple slices
Micro greens for garnish
Toasted pine nuts as required
Method
Preheat oven to 180° C. Spread grapes on a baking tray, add garlic cloves, thyme sprigs and drizzle olive oil over them.
Sprinkle salt and crushed black peppercorns on top and mix well. Keep the tray in the preheated oven and bake for 8-10 minutes.
Heat a non-stick grill pan. Place the pineapple slices in it, drizzle remaining olive oil over them. Sprinkle salt and crushed black peppercorns and grill for 2 minutes.
Flip and grill on other side for 2 minutes more. Chop roughly.
Place the baguette slices on a worktop and spread ricotta cheese evenly.
Arrange the grape mixture on top and place the grilled pineapple pieces on top.
Place some micro greens and pinenuts on top. Sprinkle crushed black peppercorns on top.
