  1. Begin by placing the spinach in a chopper jar and finely chop it. Transfer the chopped spinach into a mixing bowl.
  2. Tear three slices of brown bread and place them in a clean chopper jar, then crumble them into small pieces.
  3. Grate the potato directly into the mixing bowl with the chopped spinach. Add salt, cumin powder, and breadcrumbs, then thoroughly mix everything together using your hands.
  4. Heat two tablespoons of oil on one side of a non-stick pan. Grease your palms lightly with oil, then take small portions of the mixture and shape them into tikkis, placing them on a chopping board.
  5. Use a small cookie cutter to cut small round pieces from the remaining brown bread slices.
  6. Once the oil is heated, carefully place the tikkis in the pan and shallow-fry them over medium heat, flipping them until they turn light golden brown. Meanwhile, toast the bread roundels on the other side until they become crisp.
  7. Cut lettuce leaves into small squares.
  8. Arrange the toasted bread roundels on a tabletop. Place a dollop of tomato ketchup in the center of each roundel, followed by a piece of lettuce on top.
  9. Cut cheese into small squares and place a square on each tikki. Place a tomato piece on top and pierce a toothpick through all the layers.
  10. Once assembled, arrange the prepared snacks on a serving platter and serve them immediately.
