250 g cottage cheese (paneer)
20 aam papad pieces
1 tbsp oil
2 banana leaves, cut into 8 pieces
Chutney
½ cup roughly chopped fresh mint leaves
1 cup roughly chopped fresh coriander leaves
1 tbsp roasted Bengal gram (daalia)
6 garlic cloves
½ inch ginger, peeled and sliced
2 green chillies
1 medium onion
Salt to taste
Juice of 1 lemon
Method
To make the chutney, place mint leaves, coriander leaves, roasted Bengal gram, garlic, ginger, and green chilies into a mixer jar. Quarter the onion and add it to the mixer, along with 4-5 tablespoons of water and salt. Grind the mixture until smooth, then transfer it into a bowl. Add lemon juice and mix well.
Slice the cottage cheese into thick pieces, ensuring not to cut all the way through.
Carefully insert three pieces of aam papad into the slits of each cottage cheese slice.
Coat the stuffed cottage cheese slices generously with the prepared chutney.
Heat oil in a non-stick pan over medium heat.
On your work surface, lay out pieces of banana leaf. Place one cottage cheese slice on each piece of banana leaf, then fold the leaf to create secure packets.
Gently place the packets in the heated pan. Cook until the underside is golden brown, then flip and cook the other side until similarly browned.
Arrange the banana leaf packets neatly on a serving plate. To serve, carefully open one of the parcels and enjoy immediately.
