Cheesy Potato Cakes are a delicious way to turn simple ingredients into a crispy, comforting treat. Made with fluffy mashed potatoes and plenty of melted cheese, these golden cakes are pan-fried until perfectly crisp on the outside while staying soft and cheesy in the middle.

Ingredients
500g leftover mashed potato
3 tbsp potato flour, plus extra for dusting
200g mozzarella, cut into small cubes
Salt and white pepper
Oil, for shallow frying
Method
Combine the potato, potato flour, salt, and pepper with a wooden spoon. The mixture should be soft but hold its shape. Add a touch more potato flour if it feels sticky.
Take a few heaped tablespoons of potato mixture and cup it in your hand, making an indent. Add a cube of mozzarella, wrap the potato around it and shape it into a patty.
Heat oil in a frying pan over medium heat. Lightly dust the cakes with potato flour, and fry for 2–3 minutes per side, until golden and crisp.
