1 leek, chopped
2 large swedes, peeled
1 potato, peeled and cubed
1L vegetable stock

Method
Heat the oil in a pot over low heat. Add the leek and sweat for 3-4 minutes without allowing it to brown. Add the swede and potato, coat in the leek, then add the stock and pepper, and bring to the boil.
Cook on medium heat for 30-40 minutes, with the lid on, until the swedes are tender.
Blend until smooth. Ladle into bowls and top with a dollop of sour cream and a sprinkle of chives.
