Jacq makes Fruit Bran Muffins, a wholesome batch bake that’s perfect for lunchboxes and snack time. Wheat bran softens in Greek yoghurt, then gets mixed with wholemeal flour, honey and cinnamon for a tender muffin base. Sultanas, frozen blueberries and chopped apple add bursts of fruit in every bite, then they bake up golden in under 30 minutes. Cool, pack, and enjoy for an easy make ahead treat.
Ingredients
1½ cups (90g) wheat bran
2 cups (500g) Greek yoghurt or can sub for whole milk
½ cup (125ml) light flavoured extra virgin olive oil or melted butter
2 eggs
⅓ cup honey
3 tsp ground cinnamon
2 cups wholemeal flour
1 tbsp baking powder (or sub those for 2 cups self raising wholemeal flour)
⅔ cup (100g) sultanas
1 cup (160g) frozen blueberries
2 small (300g) red or pink lady apples, core removed, roughly chopped
Method
Heat oven to 180°C and line 12 x ½ cup muffin tins with cupcake liners.
Add bran and Greek yoghurt to a bowl and mix together, then set aside.
Whisk olive oil, eggs, honey and cinnamon together in a large mixing bowl. Fold in the bran and yoghurt with the flour and baking powder. Stir in the sultanas, blueberries and apple, then spoon into the muffin tin.
Bake for 25-30 minutes. Cool for 10 minutes in the muffin tray, then transfer to a wire rack to cool completely.
