Crispy on the outside and soft in the middle, these Savoury Rice Waffles are a fun twist on comfort food with plenty of flavor packed into every bite. Made with fluffy rice, cheese, herbs, and savory mix-ins, they cook up golden and crunchy in the waffle iron while staying light and satisfying inside.
Ingredients
250g sticky rice, warmed
1 egg
2 tbsp rice flour
1 spring onion, finely sliced
1 tbsp grated parmesan
1 tsp sesame oil
1 tsp light soy sauce or tamari (gluten-free)
Sea salt and freshly ground black pepper, to taste
Oil spray, for cooking
To Serve
1 avocado, sliced
1 fried or poached egg per serve
1 tbsp chilli oil or sweet soy drizzle
Fresh coriander or chives, to garnish
Method
Preheat a waffle maker to medium-high heat and lightly grease it with oil spray.Place heated sticky rice into a mixing bowl. Add the egg, rice flour, spring onion, parmesan, sesame oil, soy sauce (or tamari), and a pinch of sea salt and black pepper. Mix well until evenly combined — the mixture should hold together but still be slightly sticky.
Spoon portions of the rice mixture into the hot waffle maker (about 2–3 tablespoons per waffle). Close the lid and cook for 4–5 minutes, or until crisp and golden brown on the outside.
Remove carefully and keep warm while cooking the remaining mixture.
Serve the waffles warm, topped with sliced avocado, a poached or fried egg, a drizzle of chilli oil or sweet soy, and fresh coriander or chives to finish.
