Quick, comforting, and packed with bold flavor, this Nasi Goreng for One is the perfect solo meal when you want something satisfying without a lot of fuss. Fragrant fried rice is tossed with savory sauces, aromatics, and tasty toppings for that classic sweet-salty-spicy balance that makes nasi goreng so addictive.
Ingredients
2 tbsp peanut oil
1 tbsp Nasi Goreng paste
1 garlic clove, finely chopped
½ cup leftover shredded chicken
1 cup leftover rice
2 tbsp spring onion, finely sliced, plus extra for garnish
1 egg
1 tbsp chilli oil
1 tbsp fried shallots
Tomato wedges and sliced cucumber, to serve
Method
Heat 1 tablespoon of peanut oil in a wok over medium–high heat. Add garlic and chicken, and stir-fry for 1 minute, or until warmed through. Add the Nasi Goreng paste and stir until fragrant.
In a separate small pan at the same time, add the remaining tablespoon of peanut oil and fry the egg sunny side up, or to your liking.
Add the rice and spring onion, and stir-fry for about 2 minutes, or until everything is well combined and heated through.
Serve the Nasi Goreng in a bowl topped with the fried egg. Drizzle with chilli oil and sprinkle over extra spring onion and fried shallots. Add tomato wedges and sliced cucumber on the side. Enjoy!
