Golden, flaky sausage rolls filled with juicy pork, sweet apple, and fragrant fennel, baked until crisp and perfect for sharing.

Ingredients
500g pork mince
2 garlic cloves, finely grated
½ brown onion, grated
100g or 2 rashers of streaky bacon, finely chopped
1 tbsp fennel seeds, toasted
Zest and juice of 1 orange
1 apple, peeled and grated
1 tbsp Worcestershire sauce
1 tbsp finely chopped thyme
½ cup breadcrumbs (I used panko)
½ tsp salt
¼ tsp pepper
2 sheets of puff pastry
1 egg
1 tbsp milk
White & black sesame seeds to garnish
Method
Preheat oven to 200°C. To toast fennel seeds, place them in a dry frying pan and heat over medium heat, swirling in the pan until fragrant. Remove to a large mixing bowl.
To the large mixing bowl, add the pork mince, garlic, onion, bacon, orange zest and juice, apple, Worcestershire sauce, breadcrumbs, thyme and salt and pepper. Mix to combine.
Place thawed puff pastry sheets on a clean bench, slice into quarters to make 8 pieces. Divide the sausage mix into 8 equal logs, the same length as the long side of the pastry. Roll up to seal and place onto a lined baking tray. Prick each roll a few times with a fork.
To make the egg wash, whisk the egg and milk together and paint each one with a pastry brush. Sprinkle with black and white sesame seeds and bake in the oven for 25-30 mins or until golden brown and crispy.
