Ingredients
150g prawns (with shell is better)
2 sprigs curry leaves, plus extra fried curry leaves for serving
1 small piece of pandan leaf
Salt, to taste
1½ tsp black pepper
1 tsp chilli powder
¼ tsp turmeric
3 tbsp coconut oil
1 cinnamon stick
1 cardamom pod, crushed
1 large onion, sliced
5 green chilli, split open
1 tbsp crushed ginger and garlic
1½ tbsp chilli flakes
¼ lime juice
Method
Season prawns with black pepper, chilli powder, salt & turmeric. Heat up a pan on medium-high heat, add coconut oil. Once the oil is heated, add cinnamon and cardamom.
Give it a few seconds and add the onions. Sauté them for two minutes. Add curry leaves, pandan leaf, green chilli and the crushed ginger & garlic.
Sauté for three more minutes till the onions start to change colour. Now add the seasoned prawns, stir fry for one minute on high heat. Add chilli flakes and stir fry for another minute.
Kill the heat and finish with freshly squeezed lime and top with fried curry leave.
