  1. In a bowl mix egg, yoghurt, vanilla, rakija (or rum) and a pinch of olive oil.
  2. For the jam, place the strawberries and sugar in a pot over medium heat. Simmer for 20 minutes, then add the lemon juice. Stir to combine and set aside to cool.
  3. In a large bowl combine flour with baking powder, sugar and salt.
  4. Combine the wet and dry ingredients, then mix until the dough is smooth and free of lumps. Grate in lemon zest and mix again. Additionally, you can incorporate other ingredients such as finely diced apples, sultanas, chocolate chips, etc. at this stage.
  5. In a pan, heat oil on high heat. There should be at least 2 cm of oil so the batter does not stick to the bottom of the pan.
  6. Using your hands or 2 spoons, shape the dough into small balls and carefully drop them into hot oil. Ensure you lower the heat to cook them evenly. If oil is too hot, they will brown too quickly on the outside while remaining undercooked in the middle.
  7. When cooked, transfer to some paper towel and sprinkle with icing sugar or melted chocolate. Serve with strawberry jam.
