Ingredients
250g wide rice noodles (fresh or dry)
2 tbsp dark soy sauce
2 tbsp oyster sauce
1 tbsp light soy sauce
2 tbsp rice wine vinegar
1 tbsp caster sugar
3 tbsp neutral oil
3 garlic cloves
150g chicken thighs
1 egg
1 bunch Chinese broccoli
Method
Trim the ends of the Chinese broccoli and cut into 7.5 cm pieces. Separate the leaves from the stems, and slice any thick stems in half.
Heat 1 tablespoon of oil in a large, heavy-based skillet or wok over high heat.
Add garlic, and cook for 15 seconds. Add pork mince, and cook until it mostly changes from pink to white.
Add the Chinese broccoli, and cook until just wilted.
Mix in all the sauce ingredients and stir until the sugar has completely dissolved.
Push everything to one side, crack egg in and scramble
Place the noodles in the pan and stir briefly, just enough to spread the sauce and let the edges develop a caramelized texture, approximately 1 to 1 1/2 minutes.
