Ingredients
225g chopped dark chocolate
½ cup (120ml) cream
1 tsp vanilla extract
A pinch of salt
Cocoa powder
Finely chopped peanuts
Shredded coconut
Method
In a double boiler over a gentle simmer, add the cream, chocolate, vanilla extract and a pinch of salt. Ensure the water does not touch the bottom of the bowl.
Gently stir together as the chocolate begins to melt until the mixture is smooth and glossy.
Transfer the chocolate mixture to the fridge and let it chill for a few hours until firm.
Once set, use a teaspoon to scoop out portions of the mixture. Roll each portion between your palms into a ball.
Coat the truffles by rolling them in cocoa powder, chopped peanuts, or shredded coconut.
Store the truffles in the refrigerator or freezer. They won’t last long—trust me!
