Ingredients
1 sirloin steak (250g)
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp fresh rosemary or thyme, chopped (optional)
Salt and freshly ground black pepper, to taste
1 tsp paprika (optional, for smokiness)
4 large Studlite potatoes

1 large knob of butter
Method
Preheat the oven to 220°c. Cut the potatoes into thin strips or wedges, about 1/4 to 1/2 inch thick. Coat the fries in olive oil and salt, and assemble on an oven tray lined with baking paper and cook for about 30 minutes.
Meanwhile, season the steak generously with salt, pepper, and paprika. Heat olive oil in a large skillet or grill pan over high heat until very hot.
Add the steak and cook to your desired level of doneness. Add a knob of butter and a sprig of rosemary midway through cooking.
Once cooked, remove the steak from the pan and let it rest for about 5 minutes to allow the juices to redistribute.
Slice the steak against the grain and serve with the crispy fries. Optionally, garnish with fresh salt and pepper to taste. Enjoy your hearty, delicious steak frites!
