  1. Prepare the Filling — Pre heat oven to 190 degrees
  2. Remove sausage casings and place the mince in a bowl.
  3. Grate the zucchini and carrot, place in the bowl with the sausage mince and mash with a fork to combine.
  4. Add garlic, smoked paprika, salt and pepper.
  5. Assemble the Scrolls — Lay two puff pastry sheets side by side, slightly overlapping. Seal the overlap by pressing with a fork vertically.
  6. Spread the mince and vegetable mixture evenly across the pastry.
  7. Sprinkle grated cheese over the mixture.
  8. Roll the pastry tightly into a log shape. If too soft, freeze it for 10–15 minutes to firm up.
  9. Slice and Bake — Place the scrolls on a baking tray.
  10. Bake for 20–25 minutes until the pastry is golden and cooked through.
