Ingredients
1 packet frozen Urban Eats pork dumplings
2 tsp Stonemill minced garlic
1 small brown onion, diced
1 tsp Stonemill minced ginger
2 tbsp Asia Specialities red Thai curry paste
500ml Chefs’ Cupboard vegetable stock
400ml can Asia Specialities coconut cream
2 tsp Asia Specialities fish sauce
1 pak choy, roughly sliced
2 spring onions (white part only), sliced
Squeeze of lime juice
1 tsp Oh So Natural coconut oil
Optional: fresh chili for garnish
Method
Sauté onion, garlic, and ginger in coconut oil over medium heat for 1 minute. Add curry paste and cook for another 1–2 minutes until aromatic.
Pour in vegetable stock and coconut cream. Bring to a simmer.
Add dumplings and cook for 10 minutes.
Stir in pak choy, spring onions, and fish sauce. Cook until vegetables soften.
Squeeze in lime juice, then serve in bowls. Garnish with spring onions and optional chili.
